A dry-ish cheese to have with crackers?

I had some cheeses at a new years party and I am still thinking about this one cheese that was SO delicious. It was crumbling a little tiny bit when cut and it was a light yellow color I think (it was kind of dark at the party.) Anyway, I would like to buy some cheese like this. Harder and drier than cheddar but softer and wetter than like a stick of parmesean or mizithra, you know? Anyone want to take a shot at helping me out?
